This entirely depends on the airline.
For some domestic (US/EU) carriers, you get absolutely nothing included for free – not even water (which I wouldn’t ask for anyway, unless it was bottled).
On others, you get free light snacks and drinks (in economy) and sometimes full meals (in business). Some offer headphones as well.
For international carriers, in economy, business and first class you may receive amenity kits that include such things as earplugs, eye masks, socks, deodorant, toothpaste/toothbrush, hair brush etc in addition to a full meal service.
(This is one reason I like traveling on Turkish Airlines, as they offer full service to all classes, plus Turkish Delight on takeoff.)
