I love cooking.
I’m very good at it.
I not only cook, I create new dishes. I love flavor and texture and playing around with food combinations.
My sorbets and ice creams are the stuff of legend.
Why don’t I do it as a career?
The food industry, from any entry point (restaurant, food manfucturing, hospitality, etc), is backbreaking work, for little gain.
Gordon Ramsay makes more money from TV than he ever has from restaurants. Wolfgang Puck makes more money on licensing deals.
Food sucks as a career.
Better to cook at home where I enjoy it than grow to resent it in a kitchen surrounded by broke chain smokers 😉
